Gooey Butter Cookies

Postby Pianoman » March 26th, 2009, 6:00 pm

If you like Gooey Butter Cake - you'll love these.
They are awesome!

1 Box Yellow Cake Mix
1 8oz Pkg cream cheese (softened to room temperature)
1 stick butter (softened to room temperature)
1 egg
1 tsp vanilla extract
Powdered Sugar

Cream the cream cheese & butter together.
Beat in egg - then beat in cake mix.

Refrigerate at least 30 minutes (you can make without
putting in the fridge - but the dough is harder to work with).

Form into 1" balls & roll in powdered sugar.
Bake at 300 degrees for 12 to 20 minutes
(depends on how gooey you like them).

I swapped out a lemon cake mix for the yellow &
thought that was even better. A friend from work said
she makes this with Carrot Cake & spreads on
cream cheese icing (I'm trying that next & think I'm
also going to try with a chocolate cake mix.) I took a
batch to work & literally had people begging for more.

I've seen several variations for this recipe. I tried with
reduced fat cream cheese & reduced fat butter & it turned
out great with those as well. Be warned - they are addictive!
If you can't be kind, at least have the decency to be vague.
