I just tried this recipe I got from a magazine and it is great. It is cooked in a slow cooker.
1 pound boneless, skinless chicken thighs cut in 1 inch chunks
1 can diced tomatoes, undrained
4 cups chicken broth
1 medium potato, peeled and diced
1/2 cup each of chopped onion, celery, carrots
pepper to taste
1 tablespoon Italian seasoning
1 can white kidney beans, rinsed
1 medium zucchini diced
1 cup frozen broccoli, thawed
1 cup frozen green beans, thawed
Cook everything except beans, zucchini, broccoli and green beans for about 7 - 8 hours. Add the beans and vegetables and cook for about 15 minutes more.
I had this with a grilled cheese, tomato and bacon sandwich tonight.
