Candy Cane Brittle

1/2 cup light corn syrup
1 cup sugar
1 cup crushed canes
1 tsp butter
1 tsp vanilla
1 tsp baking soda

In a 1 1/2 quart microwave safe dish combine corn syrup and sugar. Sir well until blended then microwave on high for 4 minutes. Sir mixture and microwave on high 4 - 5 minutes or until light brown. Sir in butter and vanilla and blend well. Microwave on high 1 - 2 minutes. Add baking soda and stir lightly until mixture is foamy. Quickly pour onto a lightly greased baking sheet. Pour the crushed candy canes over the mixture while it is still warm and press lightly onto the surface. Let cool completely.

This is very sweet. If you want it to be a little less sweet you can use 1/2 cup of nuts (your choice), just add the nuts to the mixture after the first 4 minutes of microwaving. Then just use 1/2 cup crushed candy canes at the end after your pour the mixture onto the baking sheet.

This is really quick and easy.
