Merry Berry Salad

I serve this salad during the holidays, but, it's great any day. Just a note for the masculine cook ... the dressing is a lovely shade of pink. :D


Merry Berry Salad

1 Package ( 10 ounce mixed salad greens)
1 medium red apple, core & diced
1 medium Granny Smith apple, core & diced
1 cup (4 ounces shredded Parmesan cheese)
½ cup dried cranberries
½ cup slivered almonds, toasted

DRESSING

1 cup cranberries (Ocean Spray whole berry canned)
½ cup sugar
½ cup cider vinegar
¼ cup apple/raspberry juice concentrate (frozen juice)
¼ teaspoon salt (more or less if desired)
½ teaspoon prepared spicy brown mustard (to taste)
1 teaspoon grated onion
1 cup vegetable oil (olive or canola)

In large bowl salad bowl, toss the first six ingredients.

In a blender, combine the cranberries, sugar, vinegar, apple/raspberry juice concentrate, salt, mustard and grated onion.

Cover and process until smooth. While processing, gradually add oil in a steady stream. Drizzle over salad just before serving. Refrigerate any leftover dressing.

My family loves a mixed green salad with cranberries and almonds. I can't WAIT to try this dressing.
