Strawberry Bread

This was one of my Mother's receipes.

Preheat oven to 350 degrees

2 10 oz pkg. of frozen strawberries - thawed but don't drain them (frozen works better than fresh in this receipe)
4 eggs
1 1/4 cups vegetable oil
3 cups of flour
1 tsp soda
1 tsp salt
2 cups (level) sugar
1 1/4 cups of pecans (mix the nuts with a small amount of flour before adding them to keep them from sinking to the bottom of the pans).

Mix together strawberries, eggs and oil. Sift the dry ingredients into the strawberry mixture. Gently fold in the pecans. Pour into 2 greased 9x5 inch loaf pans. Bake in oven for 1 hour or until a wood toothpick comes out clean.

I sometimes use this to make a version of bread pudding - I just let the bread sit uncovered on the counter for a day or two to let it dry out.
